Viki Geunes (born in 1972) is the best example of how natural talent can lead to culinary excellence, even without a background in hospitality or high-profile internships. This engineer-turned-chef, along with his wife Viviane Plaquet, opened 't Zilte in Mol in 1996. His culinary journey began with simple yet tasteful cuisine, but it soon evolved into innovative techniques characterized by contemporary, intense flavors and a playful signature.

In 2004, he earned his first Michelin star, followed by numerous awards, including the title of "Best Young Top Chef" by the Gault & Millau guide and "Chef of the Year." 't Zilte relocated to Antwerp's "Museum aan de Stroom" in 2011, cementing Geunes's unique culinary style. In 2020, his daughter Gitte joined the team, and the restaurant transformed into 'Zilte,' which earned 3 Michelin stars in 2021. Today, it stands as one of only two three-star restaurants in Belgium. Since 2023, 'Zilte' has been a part of the prestigious Relais & Châteaux network. In 2024, Zilte also joined Les Grandes Tables Du Monde.
